Buck’s Peanut Butter Twists
Henry’s signature bake. He and Buck made the dough together the night before the murder, and later Buck bakes a double batch in Tess’s kitchen. Cocoa gets the twist ends.
Makes about 16 twists
Ingredients
- Dough: ¾ cup warm milk (110°F); 2¼ tsp (1 packet) instant yeast; ¼ cup sugar; 1 large egg; 3 Tbsp butter, melted; ½ tsp salt; 2¾–3 cups all-purpose flour
- Filling: ⅔ cup creamy peanut butter; ¼ cup brown sugar; 2 Tbsp butter, softened
- Glaze: 1 cup powdered sugar; 2 Tbsp creamy peanut butter; 2–3 Tbsp milk
- 1 egg beaten with 1 Tbsp milk, for brushing
Directions
- Stir warm milk, yeast, and sugar together and let stand 5 minutes. Mix in the egg, melted butter, and salt, then add flour a cup at a time until a soft dough forms.
- Knead 5–6 minutes until smooth. Cover and let rise until doubled, about 1 hour. (Like Henry and Buck, you can refrigerate the dough overnight instead.)
- Stir the filling ingredients together until smooth.
- Roll the dough into a 12×16-inch rectangle. Spread filling over half the long side, fold the other half over, and cut into 1-inch strips.
- Twist each strip 2–3 times and set on parchment-lined baking sheets. Cover and let rise 30 minutes.
- Heat oven to 375°F. Brush with egg wash and bake 14–16 minutes, until golden.
- Whisk the glaze until smooth and drizzle over the warm twists.
Cocoa’s treat: In the book Cocoa gets the twist ends. For real-life pups, skip the sugary dough and offer a lick of plain peanut butter instead. Always make sure it contains no xylitol, which is toxic to dogs.
